Hand picked from Willsmore vineyard, classic Piccadilly Valley. Eight week oak ferment, oak aged 12 months on lees, four months stainless steel on fine lees. Stone fruits, purity and length. Great with grilled and roasted chicken, grilled salmon and BBQ seafood.

WinemakingCrush and destemmed, only free run juice. Ferment mix of French and Slavonian oak Demi-muid and Barrique for 8 weeks, 50% new. Aging: Slavonian oak Demi-muid for 12 months on lees, then stainless steel for 4 months on fine lees. This wine is bottled unfined and unfiltered.
