Viticulture
The Shiraz is sourced from Paulmara's two vineyards located in Marananga on the western ridge of the Barossa Valley. Age of the vines range from 30- 80 years. -
Winemaking
Each parcel was hand-harvested at optimal ripeness and destemmed to open-top fermenters. The wine was basket pressed to one and two-year-old French oak Hogsheads for 18 months of maturation, finished unfined and unfiltered. -
Tasting
Brooding aromas of dark plum, black cherry, blueberry compote and dark chocolate. Rich mouth-coating flavours of forest fruits, dense midpalate with savoury French oak spice and fine grain tannins, with an ironstone mineral edge with a long finish. -
