Grapes & TerroirGrape variety: 100% Viognier. Origins: The vineyards are located in Serralunga d’Alba e Diano d’Alba village. Type of soil: Tending to calcareous soil, rich in sand. Harvest time: September, slightly in advanced maturation.
WinemakingSoft pressing, cold settling of the must and fermentation in oak barrels of 400 litres. Malolactic fermentation and batonnage on the yeast for a few months. Ageing: From 6 to 8 months in 400-litre French oak barrels, toasted with hot-water. Partial malolactic fermentation. Bottling usually takes place in May, the year after harvest.
TastingColour: straw-yellow of varying intensity depending on the vintages. Nose: intensely fruity nose which is aromatic and very persistent, notes of citrus and apricot. Palate: dry taste, rich full flavour, slightly of almonds at the end, with a long persistence in mouth.
Wine & Food PairingFish, shellfish, white meat but also excellent with foie-gras and fresh cheeses.
