ViticultureThe Terrace Edge organic vineyard is tended meticulously. In February hand-thinning was carried out to achieve a balanced crop level. The fruit was harvested in pristine condition.
WinemakingThis is the first season Terrace Edge have tried co-fermentation with 0.5% Viogner. After gentle de-stemming, the grapes were transferred to open top fermenters, where they were cold soaked. Native fermentation generally started after 5 days. The cap was plunged manually to achieve delicate extraction of tannin and colour from the skins. Post fermentation maceration lasted for up to 3 weeks to allow ripe fruit tannins to soften, flavours to deepen, with gains in complexity. The wine was then pressed into French oak barriques (25% new) and aged for 13 months.
TastingThe bouquet shows dark plum, cherry pie, cocoa, cedar and floral characters with nuances of black olive and spice. The palate delivers excellent fruit concentration and richness, supported by silky texture and polished tannins.
