Grapes & TerroirSebaste's Viognier vineyards are located in Serralunga d’Alba and Diano d’Alba villages, grown in soil tending to calcareous, rich in sand.
WinemakingSoft pressing, cold settling of the must and fermentation in oak barrels of 400 litres. Malolactic fermentation and batonnage on the yeast for a few months. Ageing: From 6 to 8 months in 400-litre French oak barrels, toasted with hot-water. Partial malolactic fermentation. Bottling usually takes place in May, the year after harvest.
TastingColour: straw-yellow of varying intensity depending on the vintages. Nose: intensely fruity nose which is aromatic and very persistent, notes of citrus and apricot. Palate: dry taste, rich full flavour, slightly of almonds at the end, with a long persistence in mouth.
Makers MatchGreat with fish, shellfish and white meat, also excellent with foie-gras and fresh cheeses.
