Grapes & Terroir
Sebaste's Viognier vineyards are located in Serralunga d’Alba and Diano d’Alba villages, grown in soil tending to calcareous, rich in sand. -
Winemaking
Soft pressing, cold settling of the must and fermentation in oak barrels of 400 litres. Malolactic fermentation and batonnage on the yeast for a few months. Ageing: From 6 to 8 months in 400-litre French oak barrels, toasted with hot-water. Partial malolactic fermentation. Bottling usually takes place in May, the year after harvest. -
Tasting
Colour: straw-yellow of varying intensity depending on the vintages. Nose: intensely fruity nose which is aromatic and very persistent, notes of citrus and apricot. Palate: dry taste, rich full flavour, slightly of almonds at the end, with a long persistence in mouth. -
Makers Match
Great with fish, shellfish and white meat, also excellent with foie-gras and fresh cheeses.
