Why we love this wine
WinemakingAfter gentle de-stemming, the grapes were transferred to open top fermenters, where they were cold soaked. Native fermentation generally started after 5 days. Post fermentation maceration 3 weeks to allow ripe fruit tannins to soften, flavours to deepen, with gains in complexity. The wine was then pressed into French oak barriques (25% new) and aged for 13 months.
TastingThe bouquet shows dark plum, cherry pie, cocoa, cedar and floral characters with nuances of black olive and spice. The palate delivers excellent fruit concentration and richness, supported by silky texture and polished tannins.
